Gluten & Wheat Free Brownies
½ cup wheat free flours and xanthan gum (instead of wheat flour)
½ cup cocoa
½ tsp salt
1 cup almonds or almond meal
4 oz bittersweet chocolate or semisweet chips
½ cup olive oil (instead of canola oil)
1 ripe hass avocado
½ cup granulated sugar
1 cup dark brown sugar
optional: vanilla extract/Kahlua
Preheat oven to 350. 13x9in glass baking dish lined with parchment and greased.
Whisk flour, cocoa, and salt. Grind almonds in food processor(If used whole almonds) -- add to cocoa mixture. Pulse chocolate in food processor -- add to the cocoa mixture.
Wipe out food processor. Add rest of ingredients and process until smooth.
Fold wet ingredients into dry ingredients.
Pour into prepared dish and bake 35 mins. Cool completely before cutting.
